Homemade pasta with tomato and hot pepper sauce

Homemade pasta with tomato and hot pepper sauce - this dish is called strangozzi alla spoletina. It is typical of Spoleto, a small and beautiful town in central Italy. Let's see what ingredients we need in order to prepare a paste for two people:
  • Homemade pasta;
  • 250 grams of peeled tomatoes in their own juice (pelati);
  • Black pepper;
  • A little parsley;
  • 1 clove of garlic;
  • 2 tablespoons of olive oil;
  • Hot red pepper (pepperoncino);
  • Salt.
First, wash the parsley and tear off the leaves, finely chop them. Peel the garlic and chop it into slices. Gently crush the tomatoes, turn them into a uniform sauce. Now put water on fire. Pour 2 tablespoons of olive oil into a skillet, add garlic and hot chili peppers, but open it first. Transfer to medium heat, cook until the garlic is golden. At the end, remove the garlic and pepper from the pan so that only the aromatic oil remains. Now add the tomato sauce, salt, a little pepper. Cook the sauce for 10-15 minutes, stirring constantly, until the sauce becomes thick and dark, then turn off the heat. When the water boils, add a spoonful of salt, then pasta. You need to cook the paste for 4 minutes. Then put the sauce on the fire again. Add a little water from a saucepan with pasta to it, a little parsley - the sauce is ready. Drain the water from the paste through a colander, transfer it to a pan, mix. Our pasta is ready. This paste does not need to add cheese, just a little parsley. Enjoy your meal.
